originally oatmeal raisin chews
adapted from the mrs.fields cookie book
{ingredients}:
.: 2 1/4 cups all-purpose flour
.: 1 tsp. baking soda
.: 1/4 tsp. salt
.: 1 cup quick oats (not instant)
.: 1 cup dark brown sugar, packed
.: 1/2 cup white sugar (i only put 1/4 c. of sugar)
.: 1 cup salted butter, softened (i used unsalted butter)
.: 2 tbsp. honey
.: 2 tsp. pure vanilla extract
.: 2 large eggs
.: 1 1/2 cups raisins (i did a combo of 1 c. raisins & 1/2 c. dried apricots, chopped)
.: 1/2 cup walnuts, chopped (optional)
{directions}:
1. preheat oven to 300 F
2. in a medium bowl combine flour, soda, salt & oats. mix well w/ wire whisk & set aside.
3. in a large bowl blend sugars w/ electric mixer set at medium speed. add butter & mix to form a grainy paste. scrape down sides of bowl, then add honey, vanilla & eggs. mix at medium speed until fully combined.
4. add the flour mixture, raisins & walnuts, & blend at low speed just until combined. do not overmix.
5. drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. bake for 18-22 mins. or until cookies are light golden brown. immediately transfer cookies w/ a spatula to a cool flat surface.
sorry about the delay in posting the recipe to my favorite oatmeal raisin cookies which came from the mrs.fields cookie book, my first purchased cookbook. i've tried a few recipes from this cookie book but it was the oatmeal raisins that i keep making again and again. this time with only a few minor changes, the cookies came out equally as good as the ones before and the specks of orange from the apricots gave them a wonderful burst of color.
