brown sugar ginger men
recipe from sweetfineday

{shortbread dough}:
.: 8 oz butter, softened
.: 1/2 cup dark brown sugar
.: 2 cups flour
.: 1 tbsp. dried ground ginger
.: 1 tsp. cinnamon

{directions}:
mix everything on low speed in an electric mixer with the paddle attachment until just combined. roll between two sheets of parchment paper to about 1/8-inch thickness. transfer to a cookie sheet & refrigerate until completely chilled. peel off the paper from the dough. cut out gingerbread men using a cookie cutter & transfer each to a parchment lined cookie sheet. bake in a preheated 325 degree oven for about 12 minutes or until crisp. let the cookies cool while you prepare the icing.

{icing}:
.: 2 cups powdered sugar
.: 1 egg white
.: approximately 1 tbsp. water

{directions}:
whisk everything together in a bowl using just enough water to make an icing that holds its shape, but is not too hard to pipe. place in a pastry bag fitted with a small round tip. decorate the cooled cookies as desired. let rest for at least 20 minutes before using, to allow the icing to dry.

after seeing those cute ginger men cookies from the blog of sweet fine day, i was excited about making them into cloud-shaped cookies using my purchased cloud cutter which i stashed away since i received it in june. even better, this is so my type of recipe, short, simple, and sweet. i am sharing my smiley cloud cookies with you all & on top of that, have a swell weekend. :)
