makes 8 cupcakes

{cupcakes}:
.: 120g caster sugar
.: 40g butter, at room temperature
.: seeds from half a vanilla bean
.: 1 egg
.: 120g plain flour
.: 1 ½ tsp baking powder
.: a pinch of salt
.: 120g milk

{directions}:
preheat oven to 350 F & line a muffin tin with 8 cases. in a bowl, combine the sugar, butter, & vanilla seeds. mix in the egg. then add the flour, baking powder & salt. finish with the milk. divide in between the cases & bake for 17 minutes, or until a toothpick inserted into the center of one of the cakes comes out clean. remove from the tin & allow to cool down on a wire rack.

{frosting}:
.: 500g icing sugar, sifted (used only half)
.: 1 heaped tsp of matcha green tea (added 1 tbsp)
.: 160g butter, at room temperature
.: 60g milk
.: sprinkles, to decorate

{directions}:
beat the icing sugar, matcha & butter together in a standing mixer fitted with the paddle attachment until it comes together. mix in the milk, and keep beating until light and fluffy. using a palette knife, stack the frosting in the shape of a cone, on top of the cooled cupcakes, then twist around to get rid of the excess frosting and create a swirl. immediately sprinkle with the decoration of your choice as the frosting tends to form a slight crust quite quickly.

i love cupcakes and anything matcha. and i am always excited to see matcha in recipes. this recipe certainly contains the best of both worlds and is super easy to whip up requiring only a few basic ingredients. the cake itself is delicious, soft and moist. for the frosting, i rounded up on the matcha for a bolder flavor and lessen the icing sugar because it was overly sweet for my taste. also, the amount of cakes it makes is just perfect for a small group of people.
