kumquat marmalade
makes 1 (12 oz) jar

{ingredients}:
.: 2 cups cleaned & sliced kumquats (seeds removed)
.: 1 1/2 cups water
.: 1 1/2 cups sugar
.: 1 tbsp ginger (finely shredded; optional)
{directions}:
place all ingredients in a pot, stir, and bring to a boil. cook for 1 hour on low heat or until it becomes thicken. remove from heat. allow to cool slightly and then pour into sterilized jar and seal tightly. refrigerate it.
last week i purchased a bag of kumquats at the asian grocery and made marmalade with them. unexpectedly, my marmalade came out pretty good for the first try. i was amazed with the use of only three ingredients (kumquats, water, and sugar) can turn into a delicious spread for toast or can be eaten with anything and it's so easy to make. my only complaint is slicing the kumquats take time.
